How to Plan a Commercial Kitchen Layout

A step-by-step guide to designing an efficient, safe and code-compliant commercial kitchen.

Planning a commercial kitchen is one of the most critical decisions for any food service business. A well-designed kitchen reduces operating costs, speeds up service, improves hygiene compliance, and creates a safer environment for your team. A poorly designed one does the opposite — and retrofitting a kitchen mid-operation is expensive and disruptive.

Step 1 — Understand Your Menu and Volume

Before you sketch a single zone, understand what you are cooking and how much of it. A high-volume North Indian restaurant kitchen looks nothing like a QSR burger kitchen or a hospital dietary kitchen. Your menu determines your equipment, which determines your space requirements.

Key questions: How many covers per service? What cuisines are you preparing? What is the ratio of cooked-to-ready items? Do you serve breakfast, lunch and dinner, or only one? Do you have banquet or catering requirements on top of the à la carte kitchen?

Step 2 — Choose a Layout Type

There are four common commercial kitchen layout types, each suited to different operation sizes and shapes:

  • Assembly line / Linear layout — ideal for QSRs and high-volume single-item operations (sandwiches, pizzas, burgers)
  • Island layout — a central cooking block surrounded by prep and service, good for large hotels and banquet kitchens
  • Zone / section layout — separate zones for hot kitchen, cold kitchen, bakery, dishwash — best for multi-cuisine hotels and large restaurants
  • Galley layout — two parallel workstations facing each other, efficient for narrow kitchen spaces

Step 3 — Plan Your Kitchen Zones

Every commercial kitchen should include clearly defined functional zones to prevent cross-contamination, manage workflow, and maintain hygiene standards:

  • Receiving and storage — dry store, cold room, freezer room
  • Preparation area — vegetable prep, meat prep, seafood prep (separate for HACCP)
  • Hot kitchen / cooking line — ranges, ovens, fryers, griddles
  • Cold kitchen / garde manger — salad, cold starters, plating
  • Bakery / pastry (if applicable)
  • Plating and pass — the interface between kitchen and service
  • Dishwash / pot wash — ideally at the back, separate clean/dirty tracks
  • Staff facilities — changing rooms, hand-wash stations, staff meal area

Step 4 — Allow for Adequate Ventilation

Commercial kitchens generate enormous amounts of heat, steam and cooking fumes. Inadequate ventilation is the most common cause of uncomfortable working conditions, health code violations and fire risk. Budget for proper canopy extraction hoods above every cooking appliance, a make-up air system to replace extracted air, and a grease trap in the drainage system.

Step 5 — Design for Maintenance and Cleaning

Equipment should be accessible from all sides for cleaning. Leave at least 600mm of clearance around cooking equipment. Stainless steel wall cladding to 1.8m height behind cooking stations simplifies hygiene. Floor drains should be positioned under work tables, not just in the centre of the kitchen. Specify food-grade, non-slip, anti-fatigue tiles.

Step 6 — Plan for Safety and Compliance

Commercial kitchens in India are subject to FSSAI regulations, local municipal fire safety codes, and LPG/PNG safety norms. Ensure your design includes clearly marked fire exits, fire suppression systems above cooking equipment, adequate LPG/PNG safety measures (isolation valves, gas detection), and accessible first-aid provisions.
